Tropical Sunset is an extra special special coffee brought to you from Finca Las Flores in Huila Colombia. Growing up on the farm, Jhoan Vergara's curiosity about coffee only grew. Wanting to understand every step of the journey from seed to cup, he spent years studying, learning advance agricultural practices, and exploring the science behind coffee processing. This knowledge inspired him to introduce new varieties to his family's crops and refine the farms processing methods - specifically with fermentation and drying techniques - all while maintaining consistency and quality.
In 2019, Jhoan won first place in the Master of Coffee competition, giving him the chance to introduce Finca Las Flores to the global specialty coffee scene. Today, the farm stands as a model of sustainability, innovation, and commitment to excellence. Jhoan continues to push boundaries in perfecting coffee production. For him, every cup of coffee is an opportunity to tell a story - a story of hard work, passion, and a deep love for the land.
Tropical Sunset is a beautiful representation of Jhoan's excellence and innovation. Freshly harvested coffee cherries go through a 12 hour oxidation and then are exposed to thermal shock. This 50°C (or 122°F) hot water causes micro fractures in the skin of the coffee allowing deeper flavor absorption during the fermentation process. The beans are then fermented for 80 hours before being dried in a dehumidifier machine for 60 hours. This gradual drying helps stabilize flavors and and preserves the aromatic compounds necessary for a truly incredible cup of coffee.
