Dry Fly Decaf comes from Delagua Coffee, born in the lush Sierra Nevada de Santa Marta, a uniquely diverse Colombian region where snowy peaks meet the sea and natural springs sustain an incredible ecosystem of flora and fauna. With water as their most precious resource, Delagua is committed to conserving it through thoughtful, innovative processing.
They produce exclusively natural coffees—saving an estimated 880,000+ liters of water every harvest. Fermentation begins right at their partner farms in 30kg valved tanks that maintain a controlled, anaerobic environment as the cherries travel 25 hours to the drying center. This slow fermentation enhances lactic acidity and creates juicy, fruity, and clean flavor profiles that challenge the idea that naturals are inherently funky.
At their drying center, 52 raised beds—both sun-exposed and shade-covered—allow each microlot to dry naturally for 25–30 days, with every batch kept separate to maintain precision, traceability, and quality. As the only producer in the region dedicated to processing naturals at this scale, Delagua is leading a community-based movement to protect water resources and preserve biodiversity for future generations.
